I don't know if I would call a number of these sandwiches, so much as stacked salads. As I went through the book, some recipes were kind of pushing it on being called sandwiches and felt like they were just there to fill a page quota. Sandwiches were invented to provide a method of consuming food using bread, originally, to keep the eater's hands relatively clean and a lot of these recipes, while tasty looking, are definitely knife and fork foods unless you don't mind the mess of holding wet foods like fruit slices in place of bread, just so it can be called a sandwich.
