Tantalizing and foolproof recipes for everything from starters and snacks to sides and desserts.

With both vegetarianism and slow cookers being mainstream, the timing is perfect for a new slow cooker book which includes both. As usual, Judith Finlayson has developed mouth-watering recipes with broad appeal that address a wide variety of needs -- from great family fare to more sophisticated dishes for entertaining.

Full color throughout, it features not only traditional recipes and updated classics but also more exotic dishes that reflect our increasingly multicultural society. Vegetarians, vegans and even flexitarians will also be inspired. There are more than 130 vegan friendly recipes that have been identified for easy access and over 200 recipes in total.

Some of the tantalizing recipes are:

  • Onion-soused beans
  • Braised tomato bruschetta
  • Wild mushroom soup with miso
  • Smoky tomato soup with cheesy crostini
  • Broccoli and cheddar cheese cake
  • Caramelized onion quiche
  • Leek and potato cobbler with stilton
  • Wheat berry ragout
  • Vegetable biriyani
  • Butter bean and barley risotto.

From family favorites to exotic dishes, these recipes will inspire both full-time and occasional vegetarians to pull out their slow cookers. Any home cook can prepare delicious vegetarian fare with minimum attention and maximum certainty of success with Finlayson's recipes.

All the advantages of eating more vegetables and grains and the convenience of a slow cooker.

Most of the recipes required prep work prior to putting things into the crockpot (i.e. sauteing). So if you're looking for recipes that don't require this initial step, this book is not the book for you!

i was hoping this book would combine the simplicity of slow-cooker cooking and healthy, delicious vegetarian options. Sadly, nearly every recipe requires me to saute the veggies before adding them to the slow cooker, adding the extra prep time and the extra dirty pan. No thanks!

Slow cookers are appealing because they allow the cook to prep dinner well in advance, but I usually find their food to taste monochromatic, and most slow cooker recipes in other cookbooks tend to rely heavily on either cans of cream of mushroom soup, packets of boullion, or big hunks of meat. Fortunately, this cookbook relies on none of the above. The recipes are from around the world, modified for a slow cooker, and have interesting spices and flavors; the author chooses fresh ingredients, not processed ones.

The good news: these recipes look tasty.

The bad news: they do not cut down on time spent in the kitchen (which is often sold as a benefit of crock pot cooking).

Last night I made the African Peanut Stew, and it was delicious (and made the house smell heavenly). However, after dicing veggies, I was required to sautee them in a seperate pan, adding various things as I went along, before transfering to the slow cooker; then, an hour before serving, I needed to add more ingredients and follow more steps. It seems like many of the recipes in this book share these traits: delicious, but relatively time consuming for a slow cooker. If you are looking for quick meals to throw in the crockpot before heading out the door, hoping to come home to a hot dinner, this might not work for you. On the other hand, if you're willing to put in the time, the recipes do look pretty darned tasty.
